potato & leek

soup for a friend

I made an amazing chicken pie last week, the recipe was in the winter issue of notebook, it called for a leek and somehow I ended up with too many leeks in the fridge. Then a friend mentioned that he had a bumper crop of potatoes this year, did I want some?... well, of course.

I remembered a link to this recipe {thanks Christie!} so got busy making a batch of potato & leek soup, some for us, and some as a thank-you gift to my friend for the potatoes.

If it's chilly in your neck of the woods, I highly recommend this recipe, creamy and delicious, not to mention easy.
