Until recently, I believed that bircher was best when left to soak overnight, but no more! I recently discovered a way to make bircher that can fit into any hectic morning schedule, you just need to wet your oats, and while they are soaking for about 15 minutes you can be getting ready for your day, it then takes just a jiffy to mix in the yogurt and top with berries, and if you're in need of a little extra sweetness, a dash of honey.

Quantities are also flexible, but if you're a stickler for measurements, this will work as a single serve ... 1/3 cup rolled oats covered by 1/4 cup pineapple juice*, leave on the counter-top to soak for 15 minutes, then mix in 1/4 cup natural greek yogurt, top with strawberries, blueberries and raspberries.

It's the perfect hearty breakfast to get you going and keep you going throughout the warmer months, while reminding you of those leisurely cafe breakfasts you enjoy while on holidays.
